Tokneneng is a famouse street food in the Philippines, not to mention it’s counterpart calamares, fish ball, and kwek-kwek (smaller version of tokneneng made in quail eggs or itlog ng pugo).
I wasn’t able to teach my students today, I am down with slight fever, so I decided to treat my kids a fun merienda, which they enjoyed eating.
Ingredients:
1 dozen eggs
2 cups flour
1 1/2 cups water
salt and pepper to taste
orange food coloring
1 cup vinegar
1/4 cup soy sauce
1/4 cup sugar
1 small onion, minced
Directions:
1. Boil the eggs and peel off the skin. Set aside.
2. In a bowl mix the flour, water, salt, pepper, and food coloring.
3. Put the eggs in a plastic with a little flour. Make sure that all the eggs will be covered, this will help you to cover it with the batter easily.
4. Heat oil in the pan and prepare to fry the eggs with the batter.
5. In a small bowl, combine vinegar, soy sauce, sugar, and onion. This will serve as your sauce for your tokneneng.
Serve best with Mais Con Yelo.
