I consider myself lucky, because here in Phnom Penh, tilapias are bought fresh and alive. I have never tried to buy lapias as they call it, which is dead and frozen. A kilo will only cost you $2.50 or 10,000 riels in local money.

The preparation of inihaw na tilapia is very easy, all you need is fresh tilapia from the market, tomatoes and onion for the stuffing, and charcoal for grilling. Chop the onions and tomatoes, and season them with a dash of salt and pepper. Stuff the filling inside the fish and wrap it with aluminum foil to avoid spilling.

Light the charcoal and grill your fish till it’s done.

Best served with soya dip and hot rice. Enjoy!
